Ingredients:

  • 8 oz (225 g) tortilla chips (preferably thick-cut)
  • 2 cups (200 g) shredded cheddar cheese
  • 2 cups (200 g) shredded pepper jack cheese
  • 1 cup (240 ml) salsa (store-bought or homemade)
  • 1 can (15 oz/425 g) black beans, rinsed and drained
  • 1 cup (150 g) diced tomatoes
  • 1 jalapeño pepper, sliced (optional)
  • ½ cup (120 g) sour cream
  • ½ cup (40 g) sliced green onions
  • ¼ cup (15 g) fresh cilantro, chopped
  • Sliced avocado (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease the baking dish with cooking spray or oil.
  3. Spread half the tortilla chips evenly at the bottom of the dish.
  4. Sprinkle half of the cheddar and pepper jack cheese over chips.
  5. Spoon half of the salsa over the cheese, scatter half the black beans and tomatoes, and add sliced jalapeños if desired.
  6. Add the second layer with remaining chips, cheese, salsa, black beans, and tomatoes.
  7. Place in the oven and bake for 25 minutes, or until cheese is bubbly and golden brown.
  8. Remove from oven, top with sour cream, green onions, cilantro, and sliced avocado.
