Ingredients:
- 8 oz (225 g) tortilla chips (preferably thick-cut)
- 2 cups (200 g) shredded cheddar cheese
- 2 cups (200 g) shredded pepper jack cheese
- 1 cup (240 ml) salsa (store-bought or homemade)
- 1 can (15 oz/425 g) black beans, rinsed and drained
- 1 cup (150 g) diced tomatoes
- 1 jalapeño pepper, sliced (optional)
- ½ cup (120 g) sour cream
- ½ cup (40 g) sliced green onions
- ¼ cup (15 g) fresh cilantro, chopped
- Sliced avocado (optional)
Instructions:
- Preheat your oven to 350°F (175°C).
- Lightly grease the baking dish with cooking spray or oil.
- Spread half the tortilla chips evenly at the bottom of the dish.
- Sprinkle half of the cheddar and pepper jack cheese over chips.
- Spoon half of the salsa over the cheese, scatter half the black beans and tomatoes, and add sliced jalapeños if desired.
- Add the second layer with remaining chips, cheese, salsa, black beans, and tomatoes.
- Place in the oven and bake for 25 minutes, or until cheese is bubbly and golden brown.
- Remove from oven, top with sour cream, green onions, cilantro, and sliced avocado.
