Ingredients:
- 1 cup creamy or chunky peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the peanut butter, granulated sugar, brown sugar, egg, and vanilla extract. Whisk until smooth and creamy.
- Stir in the baking soda and salt until just combined.
- Using a cookie scoop or spoon, drop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Use the back of a fork to gently press down on each dough ball to form a crisscross pattern.
- Bake in the preheated oven for 10-12 minutes or until the edges are golden but centers are still soft.
- Allow cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
