Ingredients:

  • 1 cup creamy or chunky peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the peanut butter, granulated sugar, brown sugar, egg, and vanilla extract. Whisk until smooth and creamy.
  3. Stir in the baking soda and salt until just combined.
  4. Using a cookie scoop or spoon, drop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Use the back of a fork to gently press down on each dough ball to form a crisscross pattern.
  6. Bake in the preheated oven for 10-12 minutes or until the edges are golden but centers are still soft.
  7. Allow cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
