Ingredients:
- 8 ounces (227g) full-fat cream cheese, softened
- 1/2 cup (113g / 1 stick) unsalted butter, softened
- 3-4 cups (360-480g) confectioners' sugar, sifted
- 1 teaspoon (5ml) pure vanilla extract
- 1/4 teaspoon (1.25 ml) salt
- Optional: 1-2 tablespoons (15-30 ml) milk or heavy cream
Instructions:
- In a large mixing bowl, beat the softened cream cheese and butter together on medium speed until smooth and creamy. About 2-3 minutes.
- Beat in the vanilla extract and salt until combined.
- Gradually add the sifted confectioners' sugar, 1 cup at a time, beating on low speed until incorporated. Make sure to scrape down the sides of the bowl between additions.
- If the frosting is too thick, add milk or cream, 1 tablespoon at a time, until you reach your desired consistency.
- Increase the mixer speed to medium-high and beat for 1-2 minutes, until the frosting is light and fluffy.
- For best results and easier spreading, chill the frosting in the refrigerator for at least 30 minutes before using. This helps it firm up slightly.
