Ingredients:

  • 8 ounces (227g) full-fat cream cheese, softened
  • 1/2 cup (113g / 1 stick) unsalted butter, softened
  • 3-4 cups (360-480g) confectioners' sugar, sifted
  • 1 teaspoon (5ml) pure vanilla extract
  • 1/4 teaspoon (1.25 ml) salt
  • Optional: 1-2 tablespoons (15-30 ml) milk or heavy cream

Instructions:

  1. In a large mixing bowl, beat the softened cream cheese and butter together on medium speed until smooth and creamy. About 2-3 minutes.
  2. Beat in the vanilla extract and salt until combined.
  3. Gradually add the sifted confectioners' sugar, 1 cup at a time, beating on low speed until incorporated. Make sure to scrape down the sides of the bowl between additions.
  4. If the frosting is too thick, add milk or cream, 1 tablespoon at a time, until you reach your desired consistency.
  5. Increase the mixer speed to medium-high and beat for 1-2 minutes, until the frosting is light and fluffy.
  6. For best results and easier spreading, chill the frosting in the refrigerator for at least 30 minutes before using. This helps it firm up slightly.
