Ingredients:
- 1 cup all-purpose flour (120g)
- 1/4 cup lactose-free dry milk powder (30g)
- 2 tablespoons sugar (25g)
- 1 tablespoon baking powder (12g)
- 1/2 teaspoon salt (2g)
- 1 large egg
- 1 cup water (240ml) or lactose-free milk
- 2 tablespoons vegetable oil (30ml)
- 1 teaspoon vanilla extract (5ml)
- Non-stick cooking spray or additional oil for greasing the pan
Instructions:
- In a large mixing bowl, combine the flour, lactose-free dry milk powder, sugar, baking powder, and salt. Whisk until well blended.
- In a separate bowl, crack the egg and whisk it lightly. Add water (or lactose-free milk), oil, and vanilla extract. Mix until combined.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined; a few lumps are okay.
- Let the batter rest for about 5 minutes.
- Preheat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Flip pancakes and cook for another 1-2 minutes, until golden brown.
- Keep pancakes warm in a low oven until serving.
- Serve warm with your choice of toppings.
