Ingredients:

  • 1 cup (125g) all-purpose flour
  • 2 tablespoons (25g) sugar
  • 1 tablespoon (12g) baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (60g) lactose-free milk powder
  • 1 cup (240ml) water
  • 2 large eggs
  • 2 tablespoons (30ml) vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract (optional)
  • Maple syrup (for serving)
  • Fresh berries (for serving)
  • Dairy-free butter or coconut oil (for serving)

Instructions:

  1. In a bowl, combine flour, sugar, baking powder, salt, and lactose-free milk powder.
  2. In another bowl, whisk together water, eggs, vegetable oil, and vanilla extract.
  3. Pour the liquid mixture into the dry ingredients and stir gently until just combined (lumps are okay).
  4. Preheat a non-stick skillet or griddle over medium heat and lightly grease if needed.
  5. Pour 1/4 cup batter onto the skillet for each pancake and cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  6. Flip and cook for another 1-2 minutes until golden brown.
  7. Stack pancakes and serve warm with desired toppings.
