- 1 cup (125g) all-purpose flour
- 2 tablespoons (25g) sugar
- 1 tablespoon (12g) baking powder
- 1/4 teaspoon salt
- 1/2 cup (60g) lactose-free milk powder
- 1 cup (240ml) water
- 2 large eggs
- 2 tablespoons (30ml) vegetable oil or melted coconut oil
- 1 teaspoon vanilla extract (optional)
- Maple syrup (for serving)
- Fresh berries (for serving)
- Dairy-free butter or coconut oil (for serving)
Instructions:
- In a bowl, combine flour, sugar, baking powder, salt, and lactose-free milk powder.
- In another bowl, whisk together water, eggs, vegetable oil, and vanilla extract.
- Pour the liquid mixture into the dry ingredients and stir gently until just combined (lumps are okay).
- Preheat a non-stick skillet or griddle over medium heat and lightly grease if needed.
- Pour 1/4 cup batter onto the skillet for each pancake and cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Flip and cook for another 1-2 minutes until golden brown.
- Stack pancakes and serve warm with desired toppings.
