Ingredients:

  • 1 cup all-purpose flour (120g)
  • 2 tablespoons granulated sugar (25g)
  • 1 tablespoon baking powder (12g)
  • 1/2 teaspoon salt (3g)
  • 1 large egg
  • 1 cup whole milk (240ml)
  • 2 tablespoons unsalted butter, melted (30g)
  • 1 teaspoon vanilla extract (5ml)
  • Maple syrup, fresh berries, whipped cream, or powdered sugar for serving

Instructions:

  1. In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, beat the egg and then stir in the milk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix (a few lumps are okay).
  4. Preheat a non-stick skillet over medium heat. Test by sprinkling a few drops of water; if they dance, it’s ready.
  5. Pour batter onto the skillet using a ladle, making circles about 4 inches in diameter. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Keep pancakes warm in a low oven while you finish cooking the rest. Serve with your favorite toppings.
