Ingredients:
- 1 cup all-purpose flour (120g)
- 2 tablespoons granulated sugar (25g)
- 1 tablespoon baking powder (12g)
- 1/2 teaspoon salt (3g)
- 1 large egg
- 1 cup whole milk (240ml)
- 2 tablespoons unsalted butter, melted (30g)
- 1 teaspoon vanilla extract (5ml)
- Maple syrup, fresh berries, whipped cream, or powdered sugar for serving
Instructions:
- In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, beat the egg and then stir in the milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix (a few lumps are okay).
- Preheat a non-stick skillet over medium heat. Test by sprinkling a few drops of water; if they dance, it’s ready.
- Pour batter onto the skillet using a ladle, making circles about 4 inches in diameter. Cook until bubbles form on the surface, then flip and cook until golden brown.
- Keep pancakes warm in a low oven while you finish cooking the rest. Serve with your favorite toppings.
