Ingredients:

  • 1 ¾ cups all-purpose flour (220g)
  • 2 tablespoons sugar (25g)
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 large eggs, beaten
  • ¼ cup vegetable oil (60ml) (or melted coconut oil for a dairy-free option)
  • 1 cup unsweetened almond milk (240ml) (or any plant-based milk)
  • Maple syrup (for serving, optional)
  • Fresh fruit (e.g., berries or bananas) (for serving, optional)

Instructions:

  1. Preheat the waffle iron according to the manufacturers instructions, usually on a medium-high setting.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In a separate bowl, whisk the beaten eggs, vegetable oil, and almond milk until fully blended.
  4. Pour the wet ingredients into the dry ingredients slowly while whisking to avoid lumps. Mix until just combined; dont over-mix.
  5. Grease the waffle iron lightly (if necessary) and pour a ladleful of batter onto the center. Close the lid and cook until golden brown (usually about 5 minutes) or until the indicator light shows that they are done. Repeat with the remaining batter.
  6. Remove the waffles gently and serve warm with your favorite toppings.
