Ingredients:
- 1 ¾ cups all-purpose flour (220g)
- 2 tablespoons sugar (25g)
- 1 tablespoon baking powder
- ½ teaspoon salt
- 2 large eggs, beaten
- ¼ cup vegetable oil (60ml) (or melted coconut oil for a dairy-free option)
- 1 cup unsweetened almond milk (240ml) (or any plant-based milk)
- Maple syrup (for serving, optional)
- Fresh fruit (e.g., berries or bananas) (for serving, optional)
Instructions:
- Preheat the waffle iron according to the manufacturers instructions, usually on a medium-high setting.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In a separate bowl, whisk the beaten eggs, vegetable oil, and almond milk until fully blended.
- Pour the wet ingredients into the dry ingredients slowly while whisking to avoid lumps. Mix until just combined; dont over-mix.
- Grease the waffle iron lightly (if necessary) and pour a ladleful of batter onto the center. Close the lid and cook until golden brown (usually about 5 minutes) or until the indicator light shows that they are done. Repeat with the remaining batter.
- Remove the waffles gently and serve warm with your favorite toppings.
