Ingredients:

  • 1 lb ground beef (80/20 blend)
  • 1 lb ground pork
  • 1 cup bread crumbs
  • 1 large egg, beaten
  • ½ cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup Gruyère cheese, shredded
  • 2 medium onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1 tablespoon balsamic vinegar (optional)

Instructions:

  1. In a skillet, heat the butter and oil over medium heat. Add sliced onions, sauté for 10 minutes until soft. Sprinkle with sugar and cook until golden brown (about 15 minutes). Add balsamic vinegar (if using) and stir; set aside to cool.
  2. In a mixing bowl, combine ground beef, ground pork, bread crumbs, beaten egg, and milk. Add garlic powder, onion powder, thyme, black pepper, and salt. Mix until just combined, avoiding overmixing.
  3. Stir in half of the caramelized onions and half of the Gruyère cheese into the meat mixture.
  4. Transfer the meat mixture to a baking dish or loaf pan, shaping it into a loaf. Top with remaining caramelized onions and cheese.
  5. Bake in a preheated oven at 350°F (175°C) for 1 hour or until internal temperature reaches 160°F (70°C).
  6. Let the meatloaf rest for 10 minutes before slicing and serving.
