Instructions:
- Wash the green beans and dry them thoroughly with a kitchen towel; moisture is the enemy of a crispy crust.
- Set up a dredging station: in one bowl, whisk together the egg and milk. In a second bowl, combine flour, cornstarch, garlic powder, smoked paprika, cayenne, salt, and black pepper.
- Toss a handful of beans in the flour mixture to lightly coat them. This helps the wet ingredients stick better.
- Submerge the floured beans into the egg mixture, ensuring every inch is covered.
- Return the beans to the flour bowl and toss well until they are fully crusted and matte. Shake off excess flour.
- Heat 2 cups of oil in a heavy pot and heat until it reaches 375°F on a thermometer.
- Carefully lower the beans into the hot oil. Fry in batches for 2-3 minutes or until the exterior is deep golden and sizzling.
- Use a slotted spoon to transfer beans to a wire cooling rack set over a baking sheet to drain.
