Ingredients:
- ¾ cup (180ml) vegetable oil
- 3 large eggs
- 1 cup (200g) granulated sugar
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 2 tsp (10g) baking powder
- ½ tsp (3g) salt
- 2 lbs (900g) Granny Smith apples, peeled and sliced
- 1 tbsp (15ml) lemon juice
- 1 tsp (2g) ground cinnamon
- 1 cup (125g) all-purpose flour
- ½ cup (100g) granulated sugar
- ½ cup (113g) cold unsalted butter, cubed
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x13-inch pan and line it with parchment paper.
- In a large bowl, beat the oil and eggs with an electric mixer on medium-high until the mixture is creamy and pale.
- Incorporate the sugar and vanilla extract, beating for another 2 minutes until the batter looks fluffy and well-combined.
- Sift in the flour, baking powder, and salt. Mix on low speed just until the flour streaks disappear.
- Toss the sliced apples with lemon juice and cinnamon in a separate bowl until evenly coated.
- Gently fold half of the apple slices into the batter.
- Spread the batter evenly into the prepared pan. Arrange the remaining apple slices on top in a decorative pattern, pressing them slightly into the dough.
- In a small bowl, combine the streusel flour and sugar, then rub in the cold cubed butter until distinct clumps form.
- Sprinkle the streusel evenly over the top of the cake and bake for 35 minutes or until golden brown.
