Ingredients:

  • ¾ cup (180ml) vegetable oil
  • 3 large eggs
  • 1 cup (200g) granulated sugar
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 2 tsp (10g) baking powder
  • ½ tsp (3g) salt
  • 2 lbs (900g) Granny Smith apples, peeled and sliced
  • 1 tbsp (15ml) lemon juice
  • 1 tsp (2g) ground cinnamon
  • 1 cup (125g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • ½ cup (113g) cold unsalted butter, cubed

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch pan and line it with parchment paper.
  2. In a large bowl, beat the oil and eggs with an electric mixer on medium-high until the mixture is creamy and pale.
  3. Incorporate the sugar and vanilla extract, beating for another 2 minutes until the batter looks fluffy and well-combined.
  4. Sift in the flour, baking powder, and salt. Mix on low speed just until the flour streaks disappear.
  5. Toss the sliced apples with lemon juice and cinnamon in a separate bowl until evenly coated.
  6. Gently fold half of the apple slices into the batter.
  7. Spread the batter evenly into the prepared pan. Arrange the remaining apple slices on top in a decorative pattern, pressing them slightly into the dough.
  8. In a small bowl, combine the streusel flour and sugar, then rub in the cold cubed butter until distinct clumps form.
  9. Sprinkle the streusel evenly over the top of the cake and bake for 35 minutes or until golden brown.
