Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 2 tsp (10g) baking powder
- 1/4 tsp (1.5g) salt
- 1 cup (125g) all-purpose flour
- 1/2 cup (100g) light brown sugar, packed
- 6 tbsp (85g) cold unsalted butter, cubed
- 1 tsp (2g) ground cinnamon
- 2 lbs (900g) tart apples, peeled and sliced thin
- 1 tbsp (15ml) lemon juice
- 1 tsp (2g) ground cinnamon
- 2 tbsp (25g) granulated sugar
Instructions:
- In a small bowl, combine flour, brown sugar, and cinnamon.
- Using a pastry cutter or your fingertips, rub the cold cubed butter into the dry ingredients until the mixture forms pea-sized clumps. Set aside in the fridge.
- Preheat your oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper.
- Using an electric mixer, cream the softened butter and granulated sugar until pale and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract, until the batter is smooth.
- Sift together the flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined.
- Spread the batter evenly into the prepared baking pan using a spatula.
- Toss sliced apples with lemon juice, cinnamon, and sugar in a bowl.
- Arrange the apple slices in neat rows or a spiral pattern across the top of the batter, pressing them in slightly.
- Sprinkle the chilled streusel topping evenly over the apples.
- Bake for 35 minutes, or until the edges are a deep golden brown and the streusel is crisp.
