Instructions:
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together einkorn flour, baking powder, and salt.
- Cut in the chilled butter until the mixture resembles coarse crumbs.
- Gently fold in buttermilk and honey until just combined; avoid overmixing.
- Turn the dough onto a lightly floured surface and pat into a 1-inch thick round.
- Use a biscuit cutter to shape biscuits; place on the baking sheet.
- Bake for 15-20 minutes or until golden brown on top.
- Cool slightly before serving with butter or jam.
