Instructions:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together einkorn flour, baking powder, and salt.
  3. Cut in the chilled butter until the mixture resembles coarse crumbs.
  4. Gently fold in buttermilk and honey until just combined; avoid overmixing.
  5. Turn the dough onto a lightly floured surface and pat into a 1-inch thick round.
  6. Use a biscuit cutter to shape biscuits; place on the baking sheet.
  7. Bake for 15-20 minutes or until golden brown on top.
  8. Cool slightly before serving with butter or jam.
