Ingredients:

  • 1 cup (240 ml) heavy cream
  • 4 ounces (115 g) Gorgonzola cheese, crumbled
  • 2 tablespoons (30 g) unsalted butter
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions:

  1. In a small saucepan over medium heat, melt the unsalted butter.
  2. Add the minced garlic and sauté until fragrant, about 1 minute. Avoid browning it.
  3. Slowly pour in the heavy cream, whisking continuously.
  4. Stir in the crumbled Gorgonzola cheese and thyme.
  5. Allow the sauce to simmer gently, whisking frequently until the cheese has melted and the sauce thickens slightly, about 5-7 minutes.
  6. Taste and season with salt and freshly ground black pepper as needed.
  7. Remove from heat and serve warm over your choice of dish.
