Ingredients:

  • 1 tsp (2g) loose-leaf green tea
  • 1/2 cup (120ml) water
  • 1 tbsp (15ml) yuzu juice
  • 1 tbsp (15g) honey
  • 1/4 cup (60ml) sparkling water
  • 3 fresh mint leaves
  • 1 thin slice of lemon

Instructions:

  1. Steep the green tea in water heated to 175°F (80°C) for exactly 3 minutes, then remove the tea leaves immediately.
  2. Stir honey into the warm tea until completely dissolved, then stir in the yuzu juice.
  3. Fill a cocktail shaker halfway with ice, pour in the tea-citrus mixture, add fresh mint leaves, and shake vigorously for 15 seconds to create a light foam.
  4. Strain the mixture into a chilled highball glass with fresh ice, top with sparkling water, and garnish with a lemon slice and additional mint leaves.
