Ingredients:
- 1 tsp (2g) loose-leaf green tea
- 1/2 cup (120ml) water
- 1 tbsp (15ml) yuzu juice
- 1 tbsp (15g) honey
- 1/4 cup (60ml) sparkling water
- 3 fresh mint leaves
- 1 thin slice of lemon
Instructions:
- Steep the green tea in water heated to 175°F (80°C) for exactly 3 minutes, then remove the tea leaves immediately.
- Stir honey into the warm tea until completely dissolved, then stir in the yuzu juice.
- Fill a cocktail shaker halfway with ice, pour in the tea-citrus mixture, add fresh mint leaves, and shake vigorously for 15 seconds to create a light foam.
- Strain the mixture into a chilled highball glass with fresh ice, top with sparkling water, and garnish with a lemon slice and additional mint leaves.
