Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (240ml) buttermilk
  • 3 large eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 1 cup (125g) all-purpose flour for streusel
  • 3/4 cup (150g) light brown sugar, packed
  • 1/2 cup (115g) unsalted butter, melted for streusel
  • 1 tsp ground cinnamon for streusel
  • 1/2 cup (75g) chopped walnuts or pecans (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour the baking pan.
  3. In a bowl, combine flour, brown sugar, cinnamon, and melted butter to make the streusel. Mix until crumbly and incorporate nuts if using. Set aside.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and spices.
  5. In a mixing bowl, beat the softened butter and granulated sugar until light and fluffy.
  6. Add eggs one at a time, mixing well after each addition, followed by vanilla extract.
  7. Gradually add dry ingredients and buttermilk, mixing until just combined. Avoid over-mixing.
  8. Pour half the batter into the prepared pan, sprinkle half the streusel, add the remaining batter, and finish with the rest of the streusel.
  9. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  10. Allow to cool for 10 minutes in the pan, then transfer to a wire rack to cool completely before slicing.
