Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1/2 cup (115g) unsalted butter, softened
- 1 cup (240ml) buttermilk
- 3 large eggs
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 tsp vanilla extract
- 1 cup (125g) all-purpose flour for streusel
- 3/4 cup (150g) light brown sugar, packed
- 1/2 cup (115g) unsalted butter, melted for streusel
- 1 tsp ground cinnamon for streusel
- 1/2 cup (75g) chopped walnuts or pecans (optional)
Instructions:
- Preheat your oven to 350°F (175°C).
- Grease and flour the baking pan.
- In a bowl, combine flour, brown sugar, cinnamon, and melted butter to make the streusel. Mix until crumbly and incorporate nuts if using. Set aside.
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, and spices.
- In a mixing bowl, beat the softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, followed by vanilla extract.
- Gradually add dry ingredients and buttermilk, mixing until just combined. Avoid over-mixing.
- Pour half the batter into the prepared pan, sprinkle half the streusel, add the remaining batter, and finish with the rest of the streusel.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Allow to cool for 10 minutes in the pan, then transfer to a wire rack to cool completely before slicing.
