Ingredients:

  • 1 green tea bag
  • 1 cup filtered water
  • 1 tbsp honey
  • 1/2 cup chilled club soda
  • 1 tbsp fresh lemon juice
  • 5 fresh mint leaves
  • 1 slice of lemon
  • 1 sprig of fresh mint
  • 1 cup ice cubes

Instructions:

  1. Heat the filtered water until it just begins to simmer (approximately 175°F/80°C).
  2. Steep the green tea bag or loose leaves for 3 to 5 minutes until the water turns a pale jade color.
  3. Remove the tea bag and stir in the honey or simple syrup while the tea is still warm to ensure it dissolves completely.
  4. Fill a highball glass or mason jar to the brim with ice cubes.
  5. Pour the cooled green tea concentrate over the ice.
  6. Add the fresh lemon juice and drop in the fresh mint leaves.
  7. Top the glass with chilled club soda.
  8. Using a long spoon, give the drink one gentle lift from the bottom to integrate flavors without removing carbonation.
  9. Garnish with a lemon slice and a mint sprig.
