Ingredients:
- 2 lbs (900 g) bone-in, skin-on chicken thighs
- 2 tablespoons (30 mL) olive oil
- 1 teaspoon (5 g) garlic powder
- 1 teaspoon (5 g) onion powder
- 1 teaspoon (5 g) smoked paprika
- 1 teaspoon (5 g) dried oregano
- Salt, to taste (approximately 1½ teaspoons / 7 g)
- Black pepper, to taste (approximately ½ teaspoon / 2 g)
- Juice of 1 lemon
Instructions:
- In a mixing bowl, combine olive oil, garlic powder, onion powder, smoked paprika, dried oregano, lemon juice, salt, and black pepper.
- Add chicken thighs to the marinade, turning to coat evenly. (Optional: Let marinate for 10 minutes for added flavor.)
- Preheat the grill to medium-high heat (about 400°F / 204°C).
- Place chicken thighs skin-side down on the grill. Grill for about 5-6 minutes until nicely charred.
- Flip and grill for another 4-5 minutes until the internal temperature reaches 165°F (74°C).
- Remove the chicken from the grill and let it rest for 5 minutes. Serve hot.
