Ingredients:

  • 2 lbs (900 g) bone-in, skin-on chicken thighs
  • 2 tablespoons (30 mL) olive oil
  • 1 teaspoon (5 g) garlic powder
  • 1 teaspoon (5 g) onion powder
  • 1 teaspoon (5 g) smoked paprika
  • 1 teaspoon (5 g) dried oregano
  • Salt, to taste (approximately 1½ teaspoons / 7 g)
  • Black pepper, to taste (approximately ½ teaspoon / 2 g)
  • Juice of 1 lemon

Instructions:

  1. In a mixing bowl, combine olive oil, garlic powder, onion powder, smoked paprika, dried oregano, lemon juice, salt, and black pepper.
  2. Add chicken thighs to the marinade, turning to coat evenly. (Optional: Let marinate for 10 minutes for added flavor.)
  3. Preheat the grill to medium-high heat (about 400°F / 204°C).
  4. Place chicken thighs skin-side down on the grill. Grill for about 5-6 minutes until nicely charred.
  5. Flip and grill for another 4-5 minutes until the internal temperature reaches 165°F (74°C).
  6. Remove the chicken from the grill and let it rest for 5 minutes. Serve hot.
