Ingredients:

  • 4 pork or chicken sausages (about 1 pound / 450g)
  • 1 tablespoon olive oil (15ml)
  • Salt and pepper to taste
  • ½ cup mayonnaise (120ml)
  • 1 tablespoon Dijon mustard (15ml)
  • 1 tablespoon lemon juice (15ml)
  • 1 teaspoon garlic powder (5g)
  • 1 tablespoon fresh parsley, chopped (15g)
  • 1 tablespoon fresh dill, chopped (15g)
  • Pinch of cayenne pepper (optional)

Instructions:

  1. In a mixing bowl, combine mayonnaise, Dijon mustard, lemon juice, garlic powder, parsley, dill, and cayenne pepper (if using).
  2. Whisk until smooth and well combined.
  3. Cover and refrigerate for at least 15 minutes.
  4. Preheat the grill to medium-high heat.
  5. Brush the sausages with olive oil and season with salt and pepper.
  6. Place sausages on the grill and cook for 10-15 minutes, turning occasionally, until browned and cooked through (internal temperature should reach 160°F/71°C).
  7. Remove sausages from the grill and let rest for a few minutes.
  8. Serve with the mayo twist on the side or generously spread on top.
