Ingredients:

  • 4 large ripe tomatoes (e.g., beefsteak or heirloom)
  • 200g (7 oz) mozzarella cheese, sliced or shredded
  • 2 tablespoons (30ml) olive oil
  • 1 teaspoon (5g) sea salt
  • ½ teaspoon (2.5g) freshly cracked black pepper
  • 1 teaspoon (5g) dried oregano or fresh, chopped
  • Fresh basil leaves, for garnish (optional)

Instructions:

  1. Wash and slice the tomatoes in half, horizontally. Scoop out some seeds if they are overly juicy.
  2. In a bowl, combine olive oil, sea salt, pepper, and oregano. Brush the cut sides of the tomatoes with the marinade.
  3. Preheat your grill to medium-high heat (about 400°F or 200°C).
  4. Place the tomatoes cut side down on the grill and grill for about 5-7 minutes until grill marks appear.
  5. Flip the tomatoes cut side up, layer mozzarella cheese over the grilled sides, close the grill lid, and cook for an additional 3-5 minutes until cheese is melted and bubbling.
  6. Remove from the grill, garnish with fresh basil if desired, and serve warm.
