Ingredients:

  • 1 lb ground beef (85% lean recommended)
  • 4 cups kale, chopped (stems removed)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 medium red bell pepper, diced
  • 1 tsp smoked paprika
  • 1/2 tsp red pepper flakes (optional for heat)
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Fresh lemon wedges for garnish
  • Grated Parmesan cheese (optional)

Instructions:

  1. Chop the kale, onion, and bell pepper, and mince the garlic.
  2. Heat olive oil in a large skillet over medium heat. Add the diced onion and bell pepper; sauté until they soften, about 3-5 minutes.
  3. Stir in minced garlic; cook until fragrant, about 1 minute.
  4. Add the ground beef to the skillet; cook until browned and fully cooked, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
  5. Stir in smoked paprika, red pepper flakes, salt, and pepper; cook for another minute to incorporate flavors.
  6. Gradually stir in the chopped kale; cook until wilted, about 3-4 minutes.
  7. Taste and adjust seasoning as needed; if desired, add a splash of lemon juice.
  8. Plate the mixture and garnish with lemon wedges and grated Parmesan cheese, if using.
