Ingredients:
- 1 lb ground beef (85% lean recommended)
- 4 cups kale, chopped (stems removed)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 medium red bell pepper, diced
- 1 tsp smoked paprika
- 1/2 tsp red pepper flakes (optional for heat)
- Salt and pepper, to taste
- 2 tbsp olive oil
- Fresh lemon wedges for garnish
- Grated Parmesan cheese (optional)
Instructions:
- Chop the kale, onion, and bell pepper, and mince the garlic.
- Heat olive oil in a large skillet over medium heat. Add the diced onion and bell pepper; sauté until they soften, about 3-5 minutes.
- Stir in minced garlic; cook until fragrant, about 1 minute.
- Add the ground beef to the skillet; cook until browned and fully cooked, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
- Stir in smoked paprika, red pepper flakes, salt, and pepper; cook for another minute to incorporate flavors.
- Gradually stir in the chopped kale; cook until wilted, about 3-4 minutes.
- Taste and adjust seasoning as needed; if desired, add a splash of lemon juice.
- Plate the mixture and garnish with lemon wedges and grated Parmesan cheese, if using.
