Ingredients:

  • 4 medium-sized fresh beets, peeled and sliced
  • ¾ cup granulated sugar
  • ½ cup apple cider vinegar
  • ¼ cup water
  • 1 tablespoon unsalted butter
  • 1 teaspoon cornstarch, dissolved in 2 teaspoons of water
  • Salt and pepper, to taste

Instructions:

  1. Peel and slice the beets into thin rounds or wedges.
  2. In a large saucepan, add the sliced beets and cover with water.
  3. Bring to a boil, then reduce heat and simmer for about 15-20 minutes, until tender.
  4. Drain and set aside.
  5. In the same saucepan, combine sugar, apple cider vinegar, and water.
  6. Bring to a boil, stirring until the sugar fully dissolves.
  7. Stir in the butter and dissolved cornstarch, then simmer for 2-3 minutes until slightly thickened.
  8. Add cooked beets to the glaze, stirring gently to coat without breaking the beets.
  9. Season with salt and pepper to taste.
  10. Allow beets to heat through for 5 minutes and then serve warm.
