Ingredients:
- 4 medium-sized fresh beets, peeled and sliced
- ¾ cup granulated sugar
- ½ cup apple cider vinegar
- ¼ cup water
- 1 tablespoon unsalted butter
- 1 teaspoon cornstarch, dissolved in 2 teaspoons of water
- Salt and pepper, to taste
Instructions:
- Peel and slice the beets into thin rounds or wedges.
- In a large saucepan, add the sliced beets and cover with water.
- Bring to a boil, then reduce heat and simmer for about 15-20 minutes, until tender.
- Drain and set aside.
- In the same saucepan, combine sugar, apple cider vinegar, and water.
- Bring to a boil, stirring until the sugar fully dissolves.
- Stir in the butter and dissolved cornstarch, then simmer for 2-3 minutes until slightly thickened.
- Add cooked beets to the glaze, stirring gently to coat without breaking the beets.
- Season with salt and pepper to taste.
- Allow beets to heat through for 5 minutes and then serve warm.
