Ingredients:

  • 1 cup (240 ml) pineapple juice, warmed to 110°F (43°C)
  • 1/4 cup (60 g) granulated sugar
  • 1/4 cup (60 g) unsalted butter, softened
  • 2 large eggs
  • 3 1/2 cups (440 g) bread flour
  • 1 teaspoon instant yeast
  • 1/2 teaspoon salt
  • 1/4 cup (40 g) shredded coconut (unsweetened)
  • 2 tablespoons (30 g) melted butter (for brushing)
  • Extra shredded coconut for sprinkling

Instructions:

  1. Warm the pineapple juice and measure all other ingredients.
  2. In the order specified, add the warmed pineapple juice, sugar, butter, eggs, bread flour, instant yeast, salt, and shredded coconut into the bread pan.
  3. Select the basic mode (or sweet bread cycle) on your bread maker. Set the crust preference if applicable (light or medium) and start the machine.
  4. Check the dough after 5-10 minutes of mixing. If it appears too sticky, add a tablespoon of flour at a time until the right texture is achieved (smooth and elastic).
  5. When baking is complete, carefully remove the bread from the pan and let it cool on a wire rack. Brush with melted butter and sprinkle coconut if desired.
  6. Once cooled, slice the bread into even pieces and serve.
