Ingredients:
- 1 cup (240 ml) pineapple juice, warmed to 110°F (43°C)
- 1/4 cup (60 g) granulated sugar
- 1/4 cup (60 g) unsalted butter, softened
- 2 large eggs
- 3 1/2 cups (440 g) bread flour
- 1 teaspoon instant yeast
- 1/2 teaspoon salt
- 1/4 cup (40 g) shredded coconut (unsweetened)
- 2 tablespoons (30 g) melted butter (for brushing)
- Extra shredded coconut for sprinkling
Instructions:
- Warm the pineapple juice and measure all other ingredients.
- In the order specified, add the warmed pineapple juice, sugar, butter, eggs, bread flour, instant yeast, salt, and shredded coconut into the bread pan.
- Select the basic mode (or sweet bread cycle) on your bread maker. Set the crust preference if applicable (light or medium) and start the machine.
- Check the dough after 5-10 minutes of mixing. If it appears too sticky, add a tablespoon of flour at a time until the right texture is achieved (smooth and elastic).
- When baking is complete, carefully remove the bread from the pan and let it cool on a wire rack. Brush with melted butter and sprinkle coconut if desired.
- Once cooled, slice the bread into even pieces and serve.
