- 2 cups fresh, ripe tomatoes, chopped
- 1 medium onion, finely chopped

- 1/2 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes (optional)
- Fresh basil, chopped (for garnish)
- Chopped green onions (for garnish)
Instructions:
- Chop the fresh tomatoes and onion, mince the garlic.
- In a skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent (about 5 minutes). Stir in minced garlic and sauté for an additional minute until fragrant.
- Add the chopped tomatoes to the skillet. Stir in salt, black pepper, sugar, oregano, and red pepper flakes.
- Bring the mixture to a gentle simmer. Cook uncovered for 15-20 minutes until tomatoes break down and the gravy thickens, stirring occasionally.
- Taste and adjust seasoning as needed. Add more salt, pepper, or sugar if desired.
- Garnish with fresh basil and green onions if using. Serve hot over your favorite dish.
