Ingredients:

  • 2 cups fresh, ripe tomatoes, chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil

  • 1/2 teaspoon black pepper
  • 1 teaspoon sugar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Fresh basil, chopped (for garnish)
  • Chopped green onions (for garnish)

Instructions:

  1. Chop the fresh tomatoes and onion, mince the garlic.
  2. In a skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent (about 5 minutes). Stir in minced garlic and sauté for an additional minute until fragrant.
  3. Add the chopped tomatoes to the skillet. Stir in salt, black pepper, sugar, oregano, and red pepper flakes.
  4. Bring the mixture to a gentle simmer. Cook uncovered for 15-20 minutes until tomatoes break down and the gravy thickens, stirring occasionally.
  5. Taste and adjust seasoning as needed. Add more salt, pepper, or sugar if desired.
  6. Garnish with fresh basil and green onions if using. Serve hot over your favorite dish.
