Ingredients:

  • 2 cups cooked chicken, diced (470g)
  • 1 cup celery, finely chopped (100g)
  • 1/2 cup red onion, finely chopped (80g)
  • 1 cup grapes, halved (150g)
  • 1/2 cup walnuts or pecans, chopped (75g)
  • 1/2 cup mayonnaise (120ml)
  • 1 tablespoon Dijon mustard (15g)
  • 1 tablespoon apple cider vinegar (15ml)
  • Salt and pepper, to taste

Instructions:

  1. Dice the cooked chicken, chop celery, and onion, halve the grapes, and chop the nuts.
  2. In a small bowl, combine mayonnaise, mustard, vinegar, salt, and pepper. Whisk until smooth.
  3. In a large mixing bowl, add the chicken, celery, onion, grapes, and nuts.
  4. Pour the dressing over the salad mixture. Stir gently until everything is evenly coated.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Use a serving spoon to transfer the salad to a bowl or serve on sandwiches.
