Ingredients:
- 2 cups cooked chicken, diced (470g)
- 1 cup celery, finely chopped (100g)
- 1/2 cup red onion, finely chopped (80g)
- 1 cup grapes, halved (150g)
- 1/2 cup walnuts or pecans, chopped (75g)
- 1/2 cup mayonnaise (120ml)
- 1 tablespoon Dijon mustard (15g)
- 1 tablespoon apple cider vinegar (15ml)
- Salt and pepper, to taste
Instructions:
- Dice the cooked chicken, chop celery, and onion, halve the grapes, and chop the nuts.
- In a small bowl, combine mayonnaise, mustard, vinegar, salt, and pepper. Whisk until smooth.
- In a large mixing bowl, add the chicken, celery, onion, grapes, and nuts.
- Pour the dressing over the salad mixture. Stir gently until everything is evenly coated.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- Use a serving spoon to transfer the salad to a bowl or serve on sandwiches.
