Ingredients:
- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, cold and cubed
- 2 tablespoons granulated sugar
- ½ teaspoon salt
- 3-4 tablespoons ice water
- 2 cups fresh goumi berries
- ¾ cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- ½ teaspoon vanilla extract
- 1 teaspoon ground cinnamon (optional)
- 1 large egg (for egg wash)
- 1 tablespoon milk
Instructions:
- Combine flour, sugar, and salt in a bowl. Cut in cold butter until the mixture resembles pea-sized crumbs. Add ice water gradually, mixing until the dough comes together. Form into a disc, wrap in plastic, and chill for 30 minutes.
- In a bowl, mix goumi berries, sugar, cornstarch, lemon juice, and vanilla. Let sit while the dough chills to allow the flavors to meld.
- Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface to fit the pie dish. Place the bottom crust in the pie dish and pour in the berry filling. Roll out the top crust, place it over the filling, and seal the edges. Cut slits for steam to escape, and brush the top with egg wash if desired.
- Place the pie on a baking sheet and bake for 40-45 minutes until the crust is golden brown. Check the filling is bubbling to ensure it’s cooked through.
- Allow the pie to cool for at least 1 hour before slicing.
