Ingredients:

  • 10 oz canned tuna in water, drained thoroughly
  • 2 large hard-boiled eggs, finely diced
  • 1/3 cup avocado oil mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 2 tbsp red onion, minced
  • 1/4 tsp sea salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. Drain the canned tuna through a fine-mesh strainer, pressing down firmly with a spoon to remove all excess water. Finely dice the red onion and hard-boiled eggs.
  2. In a medium mixing bowl, whisk together the avocado oil mayonnaise, Dijon mustard, and fresh lemon juice until the mixture is smooth and velvety.
  3. Add the drained tuna, diced eggs, and red onion to the bowl. Gently fold the ingredients into the dressing using a fork.
  4. Stir in the salt and pepper. Mix only until combined to avoid breaking down the tuna flakes into a paste.
