Ingredients:

  • 1 ½ cups Frozen Strawberries (unsweetened)
  • 1 fl oz Freshly Squeezed Lime Juice
  • 1 ½ fl oz Simple Syrup (1:1 ratio)
  • 3 fl oz Vodka (clear, neutral, for red layer)
  • 3 fl oz Cream of Coconut (e.g., Coco López)
  • 2 tbsp Plain Yoghurt (full-fat, Greek style)
  • 2 fl oz White Rum (or Vodka, for white layer)
  • 1 fl oz Pineapple Juice
  • 2 cups Ice Cubes
  • 3 fl oz Blue Curaçao Liqueur
  • 1 fl oz Vodka (for blue layer)
  • ½ fl oz Freshly Squeezed Lemon Juice
  • 2 tbsp Granulated Sugar (for rim)
  • Dash Red and Blue Food Colouring (Gel, optional)
  • Fresh Blueberries and Sliced Strawberries (for garnish)

Instructions:

  1. Prep the Glasses: Mix the sugar with a tiny drop of red and blue food colouring on a shallow plate (optional). Moisten the rims of the serving glasses with a lime wedge and gently press into the coloured sugar mixture. Place glasses in the freezer to chill completely.
  2. Measure Ingredients: Have all measured liquid ingredients ready to go before blending, as frozen cocktails wait for no one!
  3. Prepare the Red Layer: Combine frozen strawberries, 3 fl oz vodka, simple syrup, and lime juice in the high-speed blender. Blend until completely smooth and thick (consistency should be like a thick milkshake).
  4. Set the Red Layer: Pour the red mixture evenly into the four chilled glasses. Immediately return the glasses to the freezer for a minimum of 30-45 minutes until the layer is semi-solid.
  5. Prepare the White Layer: Combine the Cream of Coconut, white rum (or vodka), Greek yoghurt, and pineapple juice. Blend until smooth. This layer should be noticeably less icy and more liquid/creamy than the red layer.
  6. Layer the White: Gently remove the glasses from the freezer. Slowly pour or spoon the white mixture over the back of a spoon onto the solidified red layer, dividing it evenly. Return the glasses to the freezer for another 30 minutes.
  7. Prepare the Blue Layer (The Thickest): Combine 2 cups of ice, Blue Curaçao, 1 fl oz vodka, and lemon juice. Blend aggressively until it forms a very thick, snow-like slush. This layer must be the thickest and coldest.
  8. Layer the Blue: Remove the glasses from the freezer. Use a spoon to scoop and gently pack the thick blue slush on top of the white layer. Smooth the top slightly.
  9. Final Chill and Garnish: Place the finished cocktails back in the freezer for 10-15 minutes to fully set the top layer. Garnish each drink with a skewer of fresh blueberries and a strawberry slice before serving immediately.
