Ingredients:

  • 4 fillets of flounder (approximately 6 oz / 170 g each)
  • 4 tablespoons unsalted butter (56 g), melted
  • 2 tablespoons fresh lemon juice (30 mL)
  • Zest of 1 lemon
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt (6 g)
  • ½ teaspoon black pepper (1 g)
  • 1 lb (450 g) asparagus, trimmed
  • 2 tablespoons olive oil (30 mL)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: juice of ½ lemon for finishing

Instructions:

  1. Preheat the oven to 425°F (220°C) for the asparagus.
  2. Toss asparagus with olive oil, minced garlic, salt, and pepper in a mixing bowl.
  3. Spread asparagus on a baking sheet and roast for 10-12 minutes until tender.
  4. In a small bowl, whisk together melted butter, lemon juice, lemon zest, minced garlic, parsley, salt, and pepper.
  5. Heat a large skillet over medium-high heat and add flounder fillets, cooking for 3-4 minutes on each side until golden brown and cooked through.
  6. Once cooked, drizzle the flounder with the lemon herb butter sauce.
  7. Serve with garlic roasted asparagus and an optional squeeze of fresh lemon juice.
