Ingredients:
- 4 fillets of flounder (approximately 6 oz / 170 g each)
- 4 tablespoons unsalted butter (56 g), melted
- 2 tablespoons fresh lemon juice (30 mL)
- Zest of 1 lemon
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt (6 g)
- ½ teaspoon black pepper (1 g)
- 1 lb (450 g) asparagus, trimmed
- 2 tablespoons olive oil (30 mL)
- 2 cloves garlic, minced
- Salt and pepper to taste
- Optional: juice of ½ lemon for finishing
Instructions:
- Preheat the oven to 425°F (220°C) for the asparagus.
- Toss asparagus with olive oil, minced garlic, salt, and pepper in a mixing bowl.
- Spread asparagus on a baking sheet and roast for 10-12 minutes until tender.
- In a small bowl, whisk together melted butter, lemon juice, lemon zest, minced garlic, parsley, salt, and pepper.
- Heat a large skillet over medium-high heat and add flounder fillets, cooking for 3-4 minutes on each side until golden brown and cooked through.
- Once cooked, drizzle the flounder with the lemon herb butter sauce.
- Serve with garlic roasted asparagus and an optional squeeze of fresh lemon juice.
