Ingredients:

  • 4 cups fresh strawberries, hulled and sliced
  • 1 ½ cups granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 package fruit pectin (optional, for thicker jam)

Instructions:

  1. Hull and slice strawberries into small pieces.
  2. In a large pot, combine sliced strawberries, granulated sugar, and lemon juice.
  3. Use a potato masher to crush strawberries to your desired consistency (leave some chunks for texture).
  4. Heat the pot over medium-high heat, stirring until the sugar dissolves. Bring to a boil and let it simmer for 30-40 minutes, stirring frequently.
  5. If using, sprinkle in pectin and continue to boil for an additional 1-2 minutes, stirring to combine.
  6. Perform the plate test by dropping a spoonful of jam on a cold plate. If it sets after a minute
  7. Pour the hot jam into sterilized jars, leaving a small headspace, and seal with lids.
  8. Allow to cool at room temperature, then refrigerate.
