Ingredients:
- 1.25 cups (155g) all-purpose flour
- 0.5 tsp (3g) salt
- 0.5 cup (113g) cold unsalted butter, cubed
- 3-4 tbsp (45-60ml) ice-cold water
- 15 oz (425g) pure pumpkin purée
- 0.75 cup (180ml) 100% pure maple syrup
- 3 large (150g) eggs, room temperature
- 1 cup (240ml) evaporated milk
- 1 tsp (2g) ground cinnamon
- 0.5 tsp (1g) ground ginger
- 0.25 tsp (0.5g) ground cloves
- 0.5 tsp (3g) flaky sea salt
Instructions:
- Cut the cold butter into the flour and salt until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, until the dough just holds together.
- Roll out the dough on a floured surface and press into a 9-inch deep-dish pie plate.
- Chill the crust in the fridge for 15 minutes to prevent shrinkage during baking.
- In a large bowl, combine the pumpkin purée and maple syrup, whisking until smooth.
- Beat in the eggs one at a time, then stir in the evaporated milk and spices.
- Pour the filling into the chilled crust.
- Bake at 350°F (175°C) for 50–60 minutes until the edges are set and the center has a slight, uniform jiggle.
- Sprinkle the top of the pie with flaky sea salt before serving to balance the richness.
