Ingredients:

  • 4 tbsp all-purpose flour
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp coconut sugar
  • 1/4 tsp baking powder
  • 1 pinch salt
  • 2 tbsp non-fat Greek yogurt
  • 3 tbsp unsweetened almond milk
  • 1/2 tsp vanilla extract
  • 1 tbsp dark chocolate chips

Instructions:

  1. In a 12 oz microwave-safe mug, whisk together the flour, cocoa powder, coconut sugar, baking powder, and salt until no clumps remain.
  2. Add the Greek yogurt, almond milk, and vanilla extract to the dry mixture.
  3. Whisk with a small fork until the batter is smooth and the cocoa is fully integrated (bloomed) with the wet ingredients.
  4. Gently fold in the dark chocolate chips if using.
  5. Microwave on high power for 1 minute and 15 seconds. Let stand for 2 minutes before serving to allow the internal steam to set the crumb.
