Ingredients:
- 4 tbsp all-purpose flour
- 2 tbsp unsweetened cocoa powder
- 2 tbsp coconut sugar
- 1/4 tsp baking powder
- 1 pinch salt
- 2 tbsp non-fat Greek yogurt
- 3 tbsp unsweetened almond milk
- 1/2 tsp vanilla extract
- 1 tbsp dark chocolate chips
Instructions:
- In a 12 oz microwave-safe mug, whisk together the flour, cocoa powder, coconut sugar, baking powder, and salt until no clumps remain.
- Add the Greek yogurt, almond milk, and vanilla extract to the dry mixture.
- Whisk with a small fork until the batter is smooth and the cocoa is fully integrated (bloomed) with the wet ingredients.
- Gently fold in the dark chocolate chips if using.
- Microwave on high power for 1 minute and 15 seconds. Let stand for 2 minutes before serving to allow the internal steam to set the crumb.
