Ingredients:

  • 1 medium sweet potato (approx. 8-10 oz / 225-285g)
  • Pinch of sea salt (or kosher salt)
  • Optional: 1 teaspoon olive oil or butter

Instructions:

  1. Wash and scrub the sweet potato thoroughly. No need to peel!
  2. Using a fork or knife, pierce the sweet potato several times (about 6-8 pokes) all over. This prevents explosions!
  3. Place the sweet potato on a microwave-safe plate or in a bowl. Microwave on high for 5 minutes.
  4. Carefully remove the sweet potato from the microwave (it'll be hot!). Test for doneness by gently squeezing the potato. It should feel soft to the touch. If it's still firm, continue to step 5.
  5. If the potato is not soft enough, microwave in 1-minute intervals, checking after each interval, until cooked through. Larger potatoes will take longer. This is how to microwave a sweet potato to perfection.
  6. Cut the sweet potato open, fluff the flesh with a fork, and add a pinch of salt and a pat of butter (if desired). Alternatively, drizzle with olive oil.
  7. Top with your favourite toppings and tuck in.
