Ingredients:

  • 1 cup fresh basil leaves, tightly packed (about 30 g)
  • 1 cup fresh parsley leaves, tightly packed (about 30 g)
  • ½ cup fresh mint leaves, loosely packed (about 15 g)
  • Zest of 1 lemon
  • Zest of 1 lime
  • 2 tablespoons olive oil (30 ml)
  • ½ teaspoon sea salt (2 g)
  • ¼ teaspoon black pepper (1 g)

Instructions:

  1. Rinse the fresh herbs under cold water and pat dry with a clean towel.
  2. Use a zester or microplane to remove the zest from the lemon and lime.
  3. In a food processor, add the basil, parsley, mint, lemon zest, lime zest, olive oil, sea salt, and black pepper.
  4. Pulse the ingredients together until finely chopped and well combined. Scrape down the sides of the bowl as needed.
  5. Taste the herb mix and adjust seasoning if desired.
  6. Transfer the mix to an airtight container and refrigerate.
