Ingredients:

  • 1 pound ground beef
  • 1 tablespoon vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • ½ cup sour cream
  • 1 tablespoon adobo sauce
  • 1 teaspoon lime juice
  • Salt to taste
  • 12 small corn tortillas
  • Fresh cilantro, for garnish
  • Lime wedges, for serving
  • Diced tomatoes and shredded lettuce (optional toppings)

Instructions:

  1. Heat vegetable oil in a large skillet over medium heat. Sauté onion and garlic until soft, about 3-4 minutes.
  2. Add ground beef, breaking it apart with a wooden spoon. Stir in cumin, chili powder, smoked paprika, salt, and pepper. Cook until browned, about 7-10 minutes.
  3. In a mixing bowl, combine sour cream, adobo sauce, lime juice, and salt. Whisk until smooth. Adjust seasoning as desired.
  4. Use the same skillet to warm the corn tortillas for about 30 seconds on each side or until pliable.
  5. Spoon the beef mixture onto each tortilla. Top with chipotle cream and garnish with cilantro and any desired toppings.
  6. Serve immediately with lime wedges on the side.
