Ingredients:
- 1 pound ground beef
- 1 tablespoon vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- Salt and pepper to taste
- ½ cup sour cream
- 1 tablespoon adobo sauce
- 1 teaspoon lime juice
- Salt to taste
- 12 small corn tortillas
- Fresh cilantro, for garnish
- Lime wedges, for serving
- Diced tomatoes and shredded lettuce (optional toppings)
Instructions:
- Heat vegetable oil in a large skillet over medium heat. Sauté onion and garlic until soft, about 3-4 minutes.
- Add ground beef, breaking it apart with a wooden spoon. Stir in cumin, chili powder, smoked paprika, salt, and pepper. Cook until browned, about 7-10 minutes.
- In a mixing bowl, combine sour cream, adobo sauce, lime juice, and salt. Whisk until smooth. Adjust seasoning as desired.
- Use the same skillet to warm the corn tortillas for about 30 seconds on each side or until pliable.
- Spoon the beef mixture onto each tortilla. Top with chipotle cream and garnish with cilantro and any desired toppings.
- Serve immediately with lime wedges on the side.
