  • ½ cup honey or maple syrup
  • ½ cup coconut oil, melted
  • 1 teaspoon vanilla extract

  • ¼ cup dark chocolate chips (optional)
  • ¼ cup dried fruit (optional)

Instructions:

  1. Prepare a baking pan by lining it with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, combine rolled oats, chopped nuts, and pumpkin seeds.
  3. In a separate bowl, whisk together melted coconut oil, honey (or maple syrup), vanilla extract, and sea salt until well combined.
  4. Pour the wet mixture into the dry ingredients and mix thoroughly until all the oats and nuts are coated.
  5. Transfer the mixture to the prepared baking pan, pressing down firmly to create an even layer.
  6. Refrigerate for at least 30-60 minutes or until set.
  7. Lift the bars out using the parchment overhang, cut into squares or rectangles, and serve.
