- 1 cup mixed nuts, roughly chopped
- ½ cup pumpkin seeds
- ½ cup honey or maple syrup
- ½ cup coconut oil, melted
- 1 teaspoon vanilla extract
- ½ teaspoon sea salt
- ¼ cup dark chocolate chips (optional)
- ¼ cup dried fruit (optional)
Instructions:
- Prepare a baking pan by lining it with parchment paper, leaving some overhang for easy removal.
- In a large mixing bowl, combine rolled oats, chopped nuts, and pumpkin seeds.
- In a separate bowl, whisk together melted coconut oil, honey (or maple syrup), vanilla extract, and sea salt until well combined.
- Pour the wet mixture into the dry ingredients and mix thoroughly until all the oats and nuts are coated.
- Transfer the mixture to the prepared baking pan, pressing down firmly to create an even layer.
- Refrigerate for at least 30-60 minutes or until set.
- Lift the bars out using the parchment overhang, cut into squares or rectangles, and serve.
