Ingredients:

  • 1 tablespoon (8g) paprika (not smoked)
  • 1 tablespoon (7g) dry mustard powder
  • 1 teaspoon (2g) black pepper, freshly ground
  • 1 teaspoon (2.5g) cayenne pepper (adjust to your heat preference)
  • 1/2 teaspoon (1g) ground cinnamon
  • 1/2 teaspoon (1.5g) ground allspice
  • 1/2 teaspoon (1g) ground cloves
  • 1/4 teaspoon (0.5g) ground ginger
  • 1/4 teaspoon (0.5g) mace or nutmeg (either will work!)
  • 1/4 teaspoon (0.5g) cardamom (optional, but adds a lovely depth)

Instructions:

  1. Gather your spices: Lay out all the ingredients to ensure you've got everything ready.
  2. Toast the spices (optional): If desired, lightly toast the celery salt, paprika, mustard powder, black pepper, and cayenne pepper in a dry skillet over medium-low heat for 5-10 minutes. Stir constantly until fragrant. Allow to cool slightly.
  3. Combine all ingredients: In a small mixing bowl, whisk together the toasted (or untoasted) spices with the cinnamon, allspice, cloves, ginger, mace/nutmeg, and cardamom (if using).
  4. Mix thoroughly: Ensure all the spices are evenly distributed.
  5. Store: Transfer the homemade Old Bay Seasoning to an airtight jar or container. Store in a cool, dark place.
