Ingredients:
- 1 can (400g / 15oz) chickpeas, drained and rinsed
- 1 medium red onion, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 2 cups (300g) cherry tomatoes, halved
- 1 cup (150g) Kalamata olives, pitted and halved
- 4 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon smoked paprika
- 2 tablespoons olive oil
- Salt and pepper to taste
- 100g (3.5oz) feta cheese, crumbled
- Fresh parsley, chopped (optional)
Instructions:
- Preheat your oven to 200°C (400°F).
- In a large mixing bowl, combine the diced onion, bell peppers, cherry tomatoes, olives, garlic, and chickpeas.
- Drizzle olive oil over the vegetable mix and add the oregano, smoked paprika, salt, and pepper. Toss until everything is evenly coated.
- Spread the mixture evenly in the baking dish and place in the preheated oven. Bake for 25-30 minutes until the vegetables are tender and slightly caramelised.
- Remove from the oven, sprinkle crumbled feta on top, and return to the oven for an additional 5 minutes until the cheese begins to melt.
- Sprinkle fresh parsley over the top and serve warm.
