Ingredients:

  • 1 can (400g / 15oz) chickpeas, drained and rinsed
  • 1 medium red onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 2 cups (300g) cherry tomatoes, halved
  • 1 cup (150g) Kalamata olives, pitted and halved
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 100g (3.5oz) feta cheese, crumbled
  • Fresh parsley, chopped (optional)

Instructions:

  1. Preheat your oven to 200°C (400°F).
  2. In a large mixing bowl, combine the diced onion, bell peppers, cherry tomatoes, olives, garlic, and chickpeas.
  3. Drizzle olive oil over the vegetable mix and add the oregano, smoked paprika, salt, and pepper. Toss until everything is evenly coated.
  4. Spread the mixture evenly in the baking dish and place in the preheated oven. Bake for 25-30 minutes until the vegetables are tender and slightly caramelised.
  5. Remove from the oven, sprinkle crumbled feta on top, and return to the oven for an additional 5 minutes until the cheese begins to melt.
  6. Sprinkle fresh parsley over the top and serve warm.
