Ingredients:

  • 1 tablespoon olive oil (15 ml)
  • 1 large onion, thinly sliced (approx. 200g)
  • 1 (32-ounce) jar sauerkraut, drained and rinsed (900g)
  • 1 pound kielbasa sausage, cut into 1-inch thick rounds (450g)
  • 2 medium apples (such as Honeycrisp or Braeburn), cored and sliced (approx. 300g)
  • 1 teaspoon caraway seeds (5 ml)
  • ½ teaspoon black pepper (2.5 ml)
  • Optional: 1/4 cup apple cider or chicken broth (60ml)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil in the skillet over medium heat. Add sliced onions and sauté until softened and translucent, about 5-7 minutes.
  3. Spread the drained and rinsed sauerkraut evenly over the onions in the skillet. Arrange the kielbasa rounds and apple slices on top of the sauerkraut.
  4. Sprinkle with caraway seeds and black pepper. If using, pour apple cider or chicken broth over the mixture.
  5. Transfer the skillet to the preheated oven and roast for 30-35 minutes, or until the apples are tender and the kielbasa is heated through and slightly browned.
  6. Let the dish rest for a few minutes before serving. Enjoy your kielbasa and sauerkraut!
