- 1 lb fresh string beans, trimmed
- 2 tbsp extra virgin olive oil
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 3 cloves garlic, thinly minced
- 1/4 cup grated parmesan cheese
Instructions:
- Preheat oven to 400°F (200°C). Thoroughly wash the string beans and dry them completely using a salad spinner or kitchen towel to ensure proper roasting rather than steaming.
- In a large mixing bowl, toss the bone-dry string beans with the extra virgin olive oil, sea salt, and black pepper until every bean is evenly coated.
- Spread the beans in a single layer on a large rimmed baking sheet, ensuring they do not touch or overlap.
- Roast for 10 minutes until the skins begin to wrinkle and develop small dark blistered spots.
- Remove the pan from the oven. Sprinkle the minced garlic and grated parmesan over the beans. Toss quickly with tongs and return to the oven for a final 5 minutes until the cheese is golden and garlic is fragrant.
