Ingredients:

  • 1 lb fresh string beans, trimmed
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 3 cloves garlic, thinly minced
  • 1/4 cup grated parmesan cheese

Instructions:

  1. Preheat oven to 400°F (200°C). Thoroughly wash the string beans and dry them completely using a salad spinner or kitchen towel to ensure proper roasting rather than steaming.
  2. In a large mixing bowl, toss the bone-dry string beans with the extra virgin olive oil, sea salt, and black pepper until every bean is evenly coated.
  3. Spread the beans in a single layer on a large rimmed baking sheet, ensuring they do not touch or overlap.
  4. Roast for 10 minutes until the skins begin to wrinkle and develop small dark blistered spots.
  5. Remove the pan from the oven. Sprinkle the minced garlic and grated parmesan over the beans. Toss quickly with tongs and return to the oven for a final 5 minutes until the cheese is golden and garlic is fragrant.
