Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 1 ½ cups buttermilk
  • 4 tablespoons unsalted butter, melted
  • 16 mini breakfast sausages
  • 8 wooden skewers

Instructions:

  1. Cook the mini sausages in a skillet over medium heat until browned and cooked through (about 7-10 minutes). Use tongs to turn them occasionally.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk eggs, then add buttermilk and melted butter; mix until combined. Pour the wet ingredients into the dry and stir until just combined.
  3. Once sausages are cooked, insert one sausage onto each wooden skewer and place on a baking sheet or plate.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease if necessary. Pour batter around each skewer (around ¼ cup per skewer) and cook until bubbles form on the surface (about 2-3 minutes). Flip and cook until golden brown on the other side (another 2-3 minutes).
  5. Remove from heat and serve hot with syrup or your favorite dipping sauce.
