Ingredients:
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 large eggs
- 1 ½ cups buttermilk
- 4 tablespoons unsalted butter, melted
- 16 mini breakfast sausages
- 8 wooden skewers
Instructions:
- Cook the mini sausages in a skillet over medium heat until browned and cooked through (about 7-10 minutes). Use tongs to turn them occasionally.
- In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk eggs, then add buttermilk and melted butter; mix until combined. Pour the wet ingredients into the dry and stir until just combined.
- Once sausages are cooked, insert one sausage onto each wooden skewer and place on a baking sheet or plate.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease if necessary. Pour batter around each skewer (around ¼ cup per skewer) and cook until bubbles form on the surface (about 2-3 minutes). Flip and cook until golden brown on the other side (another 2-3 minutes).
- Remove from heat and serve hot with syrup or your favorite dipping sauce.
