Ingredients:

  • 2 (6-8 ounce) salmon fillets, skin on
  • 1 tablespoon olive oil (15 ml)
  • ½ teaspoon sea salt (2.5 ml)
  • ¼ teaspoon black pepper (1.25 ml)
  • ½ lemon, sliced
  • Optional: fresh dill sprigs for garnish

Instructions:

  1. Pat the salmon fillets dry with paper towels. Season both sides with salt and pepper.
  2. Heat olive oil in an oven-safe skillet over medium-high heat until shimmering. Place salmon skin-side down and press gently for 30 seconds.
  3. Cook skin-side down for 3-4 minutes, or until the skin is golden brown and crispy.
  4. Carefully transfer the skillet to the preheated oven at 425°F (220°C).
  5. Bake for 5-8 minutes, or until the salmon is cooked through. Internal temperature should reach 145°F (63°C).
  6. Remove from oven and let rest for a minute or two before serving. Garnish with lemon slices and dill.
