Ingredients:
- 2 (6-8 ounce/170-225g each) salmon fillets, skin on or off
- 1 tablespoon/15ml olive oil
- 1 medium lemon, zested and juiced (about 2 tablespoons/30ml juice)
- 2 cloves garlic, minced
- 1 tablespoon/5g fresh herbs, chopped (dill, parsley, chives, or a mix)
- 1/4 teaspoon/1.5g salt
- 1/8 teaspoon/0.75g black pepper
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
- Pat the salmon fillets dry with paper towels. This helps with browning.
- In a small bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, chopped herbs, salt, and pepper.
- Place the salmon fillets on the prepared baking sheet. Brush or drizzle the marinade evenly over the fillets, ensuring they are well coated.
- Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Check for doneness. The internal temperature should reach 145°F (63°C).
