Ingredients:

  • 2 (6-8 ounce/170-225g each) salmon fillets, skin on or off
  • 1 tablespoon/15ml olive oil
  • 1 medium lemon, zested and juiced (about 2 tablespoons/30ml juice)
  • 2 cloves garlic, minced
  • 1 tablespoon/5g fresh herbs, chopped (dill, parsley, chives, or a mix)
  • 1/4 teaspoon/1.5g salt
  • 1/8 teaspoon/0.75g black pepper

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Pat the salmon fillets dry with paper towels. This helps with browning.
  3. In a small bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, chopped herbs, salt, and pepper.
  4. Place the salmon fillets on the prepared baking sheet. Brush or drizzle the marinade evenly over the fillets, ensuring they are well coated.
  5. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. Check for doneness. The internal temperature should reach 145°F (63°C).
