Ingredients:

  • 1 cup (240g) almond flour
  • 1 cup (200g) granulated sugar
  • 2 large egg whites, room temperature
  • ½ teaspoon vanilla extract
  • ½ teaspoon almond extract
  • Pinch of salt
  • ½ cup (75g) pine nuts, toasted
  • Powdered sugar, for dusting (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, combine almond flour, granulated sugar, and a pinch of salt; mix well.
  3. In a separate bowl, whisk the egg whites, vanilla extract, and almond extract until frothy.
  4. Slowly fold the wet mixture into the dry ingredients until just combined. Let the mixture rest for 30 minutes in the refrigerator.
  5. Using a cookie scoop or tablespoon, portion and shape the dough into balls. Roll each ball in pine nuts, pressing gently to adhere.
  6. Place the cookies on the prepared baking sheets, spacing them about 2 inches apart. Bake for 15-20 minutes, or until lightly golden on the edges.
  7. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.
  8. Dust with powdered sugar if desired before serving.
