Ingredients:
- 1 cup (240g) almond flour
- 1 cup (200g) granulated sugar
- 2 large egg whites, room temperature
- ½ teaspoon vanilla extract
- ½ teaspoon almond extract
- Pinch of salt
- ½ cup (75g) pine nuts, toasted
- Powdered sugar, for dusting (optional)
Instructions:
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, combine almond flour, granulated sugar, and a pinch of salt; mix well.
- In a separate bowl, whisk the egg whites, vanilla extract, and almond extract until frothy.
- Slowly fold the wet mixture into the dry ingredients until just combined. Let the mixture rest for 30 minutes in the refrigerator.
- Using a cookie scoop or tablespoon, portion and shape the dough into balls. Roll each ball in pine nuts, pressing gently to adhere.
- Place the cookies on the prepared baking sheets, spacing them about 2 inches apart. Bake for 15-20 minutes, or until lightly golden on the edges.
- Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Dust with powdered sugar if desired before serving.
