Ingredients:
- 8 oz (225g) cream cheese, softened
- 2 cups (200g) sharp cheddar cheese, grated
- 1 cup (240ml) beer (any pale ale works well)
- 1 tbsp (15g) Dijon mustard
- 1 tsp (5g) garlic powder
- 1/2 tsp (2g) smoked paprika
- Salt and pepper, to taste
- Tortilla chips, crusty bread, or fresh veggie sticks for serving
Instructions:
- In a mixing bowl, combine softened cream cheese, garlic powder, smoked paprika, salt, and pepper. Mix until smooth.
- Gradually add the grated cheddar cheese and Dijon mustard to the cream cheese mixture, stirring well.
- Pour the beer into a medium saucepan and heat on medium-low until warm, but not boiling. Stir continuously to avoid burning.
- Carefully add the cheese mixture to the warm beer, stirring continuously until the cheeses have melted and the dip is creamy.
- Remove from heat and serve warm with tortilla chips, bread, or fresh vegetables.
