Ingredients:

  • 8 oz (225g) cream cheese, softened
  • 2 cups (200g) sharp cheddar cheese, grated
  • 1 cup (240ml) beer (any pale ale works well)
  • 1 tbsp (15g) Dijon mustard
  • 1 tsp (5g) garlic powder
  • 1/2 tsp (2g) smoked paprika
  • Salt and pepper, to taste
  • Tortilla chips, crusty bread, or fresh veggie sticks for serving

Instructions:

  1. In a mixing bowl, combine softened cream cheese, garlic powder, smoked paprika, salt, and pepper. Mix until smooth.
  2. Gradually add the grated cheddar cheese and Dijon mustard to the cream cheese mixture, stirring well.
  3. Pour the beer into a medium saucepan and heat on medium-low until warm, but not boiling. Stir continuously to avoid burning.
  4. Carefully add the cheese mixture to the warm beer, stirring continuously until the cheeses have melted and the dip is creamy.
  5. Remove from heat and serve warm with tortilla chips, bread, or fresh vegetables.
