Ingredients:
- 1.5 cups rolled oats
- 0.5 cup vanilla protein powder
- 3 tbsp matcha powder
- 0.25 tsp sea salt
- 0.5 cup creamy almond butter
- 0.33 cup pure maple syrup
- 1 tsp vanilla extract
- 0.33 cup mini dark chocolate chips
- 2 tbsp chia seeds
Instructions:
- Place the rolled oats into the food processor. Pulse 5-8 times until the oats are broken down into a coarse meal.
- Add the protein powder, matcha, and salt, pulsing once more to ensure the green tea powder is evenly distributed.
- Add the almond butter, maple syrup, and vanilla extract to the processor. Blend on medium speed until a thick, sticky dough forms.
- Fold in the chocolate chips and chia seeds by hand using a spatula to keep the chips intact.
- Line an 8x8 inch baking pan with parchment paper and press the dough firmly into the bottom using the back of a spoon until the surface is flat.
- Place the pan in the freezer for 30 minutes to set.
