Ingredients:

  • 1.5 cups rolled oats
  • 0.5 cup vanilla protein powder
  • 3 tbsp matcha powder
  • 0.25 tsp sea salt
  • 0.5 cup creamy almond butter
  • 0.33 cup pure maple syrup
  • 1 tsp vanilla extract
  • 0.33 cup mini dark chocolate chips
  • 2 tbsp chia seeds

Instructions:

  1. Place the rolled oats into the food processor. Pulse 5-8 times until the oats are broken down into a coarse meal.
  2. Add the protein powder, matcha, and salt, pulsing once more to ensure the green tea powder is evenly distributed.
  3. Add the almond butter, maple syrup, and vanilla extract to the processor. Blend on medium speed until a thick, sticky dough forms.
  4. Fold in the chocolate chips and chia seeds by hand using a spatula to keep the chips intact.
  5. Line an 8x8 inch baking pan with parchment paper and press the dough firmly into the bottom using the back of a spoon until the surface is flat.
  6. Place the pan in the freezer for 30 minutes to set.
