Ingredients:

  • 1.5 lbs (680g) ground beef (80/20 blend recommended for flavour)
  • 1 large egg, lightly beaten
  • 1/4 cup (30g) breadcrumbs (panko or regular)
  • 2 tablespoons (30ml) Worcestershire sauce
  • 1 tablespoon (15ml) Dijon mustard
  • 1 teaspoon (5ml) garlic powder
  • 1/2 teaspoon (2.5ml) onion powder
  • 1/2 teaspoon (2.5ml) dried thyme
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons (30ml) olive oil (or other cooking oil)
  • 2 tablespoons (30g) unsalted butter
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons (15g) all-purpose flour
  • 2 cups (475ml) beef broth (low sodium)
  • 1 tablespoon (15ml) Worcestershire sauce
  • 1/2 teaspoon (2.5ml) dried thyme
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon (15ml) chopped fresh parsley (for garnish, optional)

Instructions:

  1. In a large bowl, combine ground beef, egg, breadcrumbs, Worcestershire sauce, Dijon mustard, garlic powder, onion powder, thyme, salt, and pepper. Mix gently until just combined. Don't overmix!
  2. Divide the mixture into 4 equal portions. Shape each portion into a thick oval patty, about 3/4 inch (2 cm) thick.
  3. Heat olive oil in a large skillet over medium-high heat. Add the patties to the skillet, being careful not to overcrowd the pan.
  4. Sear the patties for 3-4 minutes per side, until nicely browned and cooked to your desired doneness (medium-rare: 130-135°F/54-57°C, medium: 135-140°F/57-60°C, medium-well: 140-145°F/60-63°C). Remove from skillet and set aside.
  5. Add butter to the same skillet. Once melted, add sliced onions and cook over medium heat, stirring occasionally, until softened and caramelized (about 15-20 minutes). Reduce heat if onions start to burn.
  6. Add minced garlic to the onions and cook for 1 minute more. Stir in flour and cook for 1 minute, stirring constantly.
  7. Gradually whisk in beef broth, scraping up any browned bits from the bottom of the pan. Add Worcestershire sauce and thyme. Bring to a simmer, then reduce heat and cook for 5-10 minutes, or until the gravy has thickened to your liking. Season with salt and pepper to taste.
  8. Return the cooked patties to the skillet with the gravy. Simmer for a few minutes to heat through. Garnish with fresh parsley (if using) and serve hot.
