Ingredients:
- 1.5 lbs (680g) ground beef (80/20 blend recommended for flavour)
- 1 large egg, lightly beaten
- 1/4 cup (30g) breadcrumbs (panko or regular)
- 2 tablespoons (30ml) Worcestershire sauce
- 1 tablespoon (15ml) Dijon mustard
- 1 teaspoon (5ml) garlic powder
- 1/2 teaspoon (2.5ml) onion powder
- 1/2 teaspoon (2.5ml) dried thyme
- Salt and freshly ground black pepper to taste
- 2 tablespoons (30ml) olive oil (or other cooking oil)
- 2 tablespoons (30g) unsalted butter
- 2 large onions, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons (15g) all-purpose flour
- 2 cups (475ml) beef broth (low sodium)
- 1 tablespoon (15ml) Worcestershire sauce
- 1/2 teaspoon (2.5ml) dried thyme
- Salt and freshly ground black pepper to taste
- 1 tablespoon (15ml) chopped fresh parsley (for garnish, optional)
Instructions:
- In a large bowl, combine ground beef, egg, breadcrumbs, Worcestershire sauce, Dijon mustard, garlic powder, onion powder, thyme, salt, and pepper. Mix gently until just combined. Don't overmix!
- Divide the mixture into 4 equal portions. Shape each portion into a thick oval patty, about 3/4 inch (2 cm) thick.
- Heat olive oil in a large skillet over medium-high heat. Add the patties to the skillet, being careful not to overcrowd the pan.
- Sear the patties for 3-4 minutes per side, until nicely browned and cooked to your desired doneness (medium-rare: 130-135°F/54-57°C, medium: 135-140°F/57-60°C, medium-well: 140-145°F/60-63°C). Remove from skillet and set aside.
- Add butter to the same skillet. Once melted, add sliced onions and cook over medium heat, stirring occasionally, until softened and caramelized (about 15-20 minutes). Reduce heat if onions start to burn.
- Add minced garlic to the onions and cook for 1 minute more. Stir in flour and cook for 1 minute, stirring constantly.
- Gradually whisk in beef broth, scraping up any browned bits from the bottom of the pan. Add Worcestershire sauce and thyme. Bring to a simmer, then reduce heat and cook for 5-10 minutes, or until the gravy has thickened to your liking. Season with salt and pepper to taste.
- Return the cooked patties to the skillet with the gravy. Simmer for a few minutes to heat through. Garnish with fresh parsley (if using) and serve hot.
