Ingredients:

  • 1/4 cup Dijon mustard
  • 1/4 cup apple cider vinegar
  • 1/2 cup extra-virgin olive oil
  • 1 tablespoon honey or maple syrup
  • Salt and freshly ground black pepper to taste

Instructions:

  1. In a small mixing bowl or jar, add the Dijon mustard and apple cider vinegar.
  2. Whisk the ingredients together until fully combined. If using a jar, secure the lid and shake vigorously to mix.
  3. Gradually whisk in the olive oil until the mixture is emulsified. If using a jar, add the olive oil and shake until well blended.
  4. Stir in or shake in the honey (or maple syrup) and season with salt and pepper to taste.
  5. Serve immediately over salads or store in the refrigerator for up to 1 week.
