Ingredients:
- 1/4 cup Dijon mustard
- 1/4 cup apple cider vinegar
- 1/2 cup extra-virgin olive oil
- 1 tablespoon honey or maple syrup
- Salt and freshly ground black pepper to taste
Instructions:
- In a small mixing bowl or jar, add the Dijon mustard and apple cider vinegar.
- Whisk the ingredients together until fully combined. If using a jar, secure the lid and shake vigorously to mix.
- Gradually whisk in the olive oil until the mixture is emulsified. If using a jar, add the olive oil and shake until well blended.
- Stir in or shake in the honey (or maple syrup) and season with salt and pepper to taste.
- Serve immediately over salads or store in the refrigerator for up to 1 week.
