Ingredients:

Instructions:

  1. Grate the fresh ginger and mince the garlic (if using).
  2. In a medium bowl or jar, combine the grated ginger, soy sauce, rice vinegar, honey, sesame oil, and garlic.
  3. Whisk the ingredients together until well combined.
  4. If the dressing is too thick, add water a teaspoon at a time until the desired consistency is reached.
  5. Taste the dressing and adjust sweetness or acidity as needed by adding more honey or vinegar.
  6. Use immediately or store in an airtight container in the refrigerator for up to a week. Shake or stir before using.
