Instructions:
- Grate the fresh ginger and mince the garlic (if using).
- In a medium bowl or jar, combine the grated ginger, soy sauce, rice vinegar, honey, sesame oil, and garlic.
- Whisk the ingredients together until well combined.
- If the dressing is too thick, add water a teaspoon at a time until the desired consistency is reached.
- Taste the dressing and adjust sweetness or acidity as needed by adding more honey or vinegar.
