Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 ripe avocado
  • ¼ cup Greek yogurt or sour cream
  • 2 tablespoons lime juice
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded cabbage or lettuce
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions:

  1. In a bowl, combine shrimp with olive oil, chili powder, cumin, garlic powder, salt, and black pepper.
  2. In a separate bowl, mash the avocado. Stir in Greek yogurt (or sour cream), lime juice, minced garlic, salt, and pepper until smooth.
  3. Heat a skillet over medium-high heat. Add seasoned shrimp and cook for 2-3 minutes on each side until pink and opaque.
  4. In a clean skillet, warm tortillas briefly until soft and pliable.
  5. Place cabbage or lettuce on each tortilla. Top with cooked shrimp and drizzle with creamy avocado sauce. Garnish with fresh cilantro.
  6. Serve tacos with lime wedges on the side.
