Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 ripe avocado
- ¼ cup Greek yogurt or sour cream
- 2 tablespoons lime juice
- 1 clove garlic, minced
- Salt and pepper to taste
- 8 small corn or flour tortillas
- 1 cup shredded cabbage or lettuce
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions:
- In a bowl, combine shrimp with olive oil, chili powder, cumin, garlic powder, salt, and black pepper.
- In a separate bowl, mash the avocado. Stir in Greek yogurt (or sour cream), lime juice, minced garlic, salt, and pepper until smooth.
- Heat a skillet over medium-high heat. Add seasoned shrimp and cook for 2-3 minutes on each side until pink and opaque.
- In a clean skillet, warm tortillas briefly until soft and pliable.
- Place cabbage or lettuce on each tortilla. Top with cooked shrimp and drizzle with creamy avocado sauce. Garnish with fresh cilantro.
- Serve tacos with lime wedges on the side.
