Ingredients:

  • 1/4 cup fresh chamomile flowers (60 ml)
  • 1/4 cup fresh peppermint leaves, roughly chopped (60 ml)
  • 1/4 cup fresh ginger root, sliced (60 ml)
  • 4 cups water (960 ml)
  • 2 tablespoons honey (optional, can be adjusted to taste) (30 g)
  • Juice of 1 lemon (about 2 tablespoons) (30 ml)

Instructions:

  1. Rinse the herbs and ginger under cold water. Slice the ginger and separate chamomile flowers from stems.
  2. In a medium saucepan, bring 4 cups of water to a boil.
  3. Once boiling, add chamomile, peppermint, and ginger. Reduce heat and let steep for 15 minutes, covered.
  4. Remove from heat and strain the mixture into a heatproof bowl or pitcher using a fine mesh strainer or cheesecloth.
  5. Stir in honey and lemon juice. Taste and adjust sweetness as desired.
  6. Let cool slightly before serving warm or chilled.
