Ingredients:
- 1/4 cup fresh chamomile flowers (60 ml)
- 1/4 cup fresh peppermint leaves, roughly chopped (60 ml)
- 1/4 cup fresh ginger root, sliced (60 ml)
- 4 cups water (960 ml)
- 2 tablespoons honey (optional, can be adjusted to taste) (30 g)
- Juice of 1 lemon (about 2 tablespoons) (30 ml)
Instructions:
- Rinse the herbs and ginger under cold water. Slice the ginger and separate chamomile flowers from stems.
- In a medium saucepan, bring 4 cups of water to a boil.
- Once boiling, add chamomile, peppermint, and ginger. Reduce heat and let steep for 15 minutes, covered.
- Remove from heat and strain the mixture into a heatproof bowl or pitcher using a fine mesh strainer or cheesecloth.
- Stir in honey and lemon juice. Taste and adjust sweetness as desired.
- Let cool slightly before serving warm or chilled.
